While I was writing my cookbook, Delicious Probiotic Drinks, I had a great deal of fun with the ginger beer section – for me the challenge of making authentic ginger beer was even more interesting than brewing the perfect batch of kombucha. Ginger beer is becoming the brewers’ choice of “near beer” alternatives, as seltzers and other RTD-style drinks pervade Australia’s drinks industry.

Once the ginger beer has finished its few-day brewing process, store it in the refrigerator for 10 days, or up to 1 month when left untouched.
