As part of our Smithery Sessions series, we have teamed up with the wonderful creatives at The Crafty Hen to host a dried floral wreath making class at our Sipsmith Distillery. Experience love this February with a budding of spring and Valentine’s Day, the perfect time for a romantic getaway. Get ready to discover The Spirit of Manchester Distillery, a state-of-the-art distillery in the heart of the city. Gin School sessions are three hours long. They also run a Gin School where you make your own gin in their state-of-the-art labs. You start by learning about the gin-making process and choosing your botanicals, then your gin is infused in their copper stills while you try their gins, before it’s bottled to take home. After starting out making moonshine in the New Zealand bush, Boutique Distillery relocated to Gloucestershire and began crafting their artisan gins. This eco-friendly distillery is the only one in the country that’s built its own copper still – known as ‘Ginavive’– from scratch using upcycled materials, and uses 100% renewable energy and condensers which reduce water usage. As we as gin drinkers have become more sophisticated, the choice to keep those hydrophobic essential oils suspended in a gin has become recognized as a design choice. Cotswolds Dry Gin proudly proclaims that they do not chill filter their gin. Cotswolds uses “10x the average amount of botanicals” in their copper pot still [ source]. The gin is distilled from neutral grain and features some local touches, including lavender from the picturesque and renowned Snowshill Lavender Farm. Sibling Gin Another sport-inspired gin is Polo Gin, which was founded by a former professional polo player after injury forced him to retire from the sport. After discovering that British polo players in India were among the first people to mix gin and tonic in India in 1857, Polo Gin was born, a smooth easy-drinking gin that’s made using sustainable, organic production methods. You’ll get a slightly more vegetal take in your Cotswold’s Gin and Tonic also, with notes of celery and eucalyptus adding perceptual coolness on the nose and palate. I recommend it garnishes with a slice of cucumber rather than the usual citrus fruit. Drawing inspiration from their surroundings, the Cotswolds Distillery is committed to supporting and celebrating the Cotswolds AONB. They use locally grown barley to make their whisky and they believe in the importance of traditional craftmanship. Despite the typical botanicals used in gin-making not being native to the UK (e.g., juniper), Cotswolds Distillery still strive to support and celebrate their surroundings by using locally grown lavender in their Dry Gin. They also produce a Wildflower gin range as well as a Hedgerow Gin using locally grown botanicals and fruit. From start to-finish, everything is controlled by hand and timed to perfection to ensure that the spirits produced are of the highest quality and flavour.
