Paul experimented infusing different liquids with the flower petal and the eureka moment came when the earthy flavoured deep indigo tea changed colour from blue to pink when mixed with tonic water. Tried this at my 1st social distancing gathering in a friends garden and was sceptical but I was fully converted. The recipe was locked, the gin tasted and looked incredible, and in a world of clear multi-national gin brands we were nervously ready to turn the most traditional spirit upside down. A curious deep indigo hue mixes to blush pink with the addition of tonic, sparking conversation wherever it pours. Ink Gin is a tasty dry gin made with 13 organic botanicals, some of which are native to the Husk Plantation Distillery in Australia where the gin is produced.Palate: Peppercorn and cardamom give it a spicy opening, with rounded notes of orange balancing it all out. It has a strangely familiar aroma, it always reminds me of working on my old Land Rover, its uncanny.
